Ten Canning Commandments

As usual during periods of recession and economic distress, folks are turning to home gardening of fruits and vegetables as a way to reduce the food budget. Even if the personal budget is not that tight, more people are gardening these days so that they can have more control over their produce supply — they can grow what they like and minimize the use of chemical pesticides or fertilizers. However, a happy consequence of a successful garden is a bountiful supply of zucchini, tomatoes and peppers! So now it is important for the gardener to become a food processor. Home canning is not difficult, but, it IS important to do it right. Here are ten “canning commandments” to help you in your pursuit of safe home canning — whether you have been canning for years or this is your first time.
